Sugar-Glazed Roasted Carrots
Sugar-Glazed Roasted Carrots
Serves 4 to 6

If the carrots have very narrow tips, trim the thin ends; they scorch easily.

Directions
1. Adjust oven rack to middle position and heat oven to 475 degrees. Heat rimmed baking sheet in oven for 10 minutes.

2. Toss carrots, melted butter, sugar, salt, and pepper in medium bowl until thoroughly combined. Remove pan from oven and place carrots in single layer on hot baking sheet. Roast until carrots are beginning to brown on bottom, about 15 minutes.

3. Remove pan from oven, toss carrots to redistribute, and continue to roast until tender and deep amber in color, about 3 minutes. Serve.

Maple-Nut Carrots
Combine 2 tablespoons maple syrup, 1/2 teaspoon vanilla extract, 1/4 teaspoon chili powder, and 1/2 cup toasted and chopped walnuts in bowl. Follow recipe for Sugar-Glazed Roasted Carrots, adding maple mixture when carrots are tossed in step 3.

Spicy Asian Carrots
Combine 1 tablespoon soy sauce, 1 teaspoon toasted sesame oil, 1 tablespoon toasted sesame seeds, 1/2 teaspoon red pepper flakes, and 2 scallions, cut into 1/2-inch lengths, in bowl. Follow recipe for Sugar-Glazed Roasted Carrots, adding soy mixture when carrots are tossed in step 3.

Herb-Garden Carrots
Follow recipe for Sugar-Glazed Roasted Carrots, adding 1 teaspoon minced fresh tarragon and 1 teaspoon minced fresh parsley when carrots are tossed in step 3.

Spiced Moroccan Carrots
Combine 2 tablespoons orange juice, 1/4 teaspoon cumin, 1/8 teaspoon cinnamon, and 1/8 teaspoon cayenne pepper in bowl. Follow recipe for Sugar-Glazed Roasted Carrots, adding spice mixture when carrots are tossed in step 3.

1 1/2 pounds medium carrots, peeled and cut into 2 by 1/2-inch pieces
2 tablespoons unsalted butter, melted
1 tablespoon dark brown sugar
1/2 teaspoon salt
1/2 teaspoon pepper
